This Nepalese pepper, known as timur, is extracted from small trees of the Zanthoxylum armatum species, growing wild in the Mahabharat mountain range. Because of its fresh and citrusy notes, some call it grapefruit pepper. This small berry is an integral ingredient in all dishes from the Teraï plains of southern Nepal.
